| 4 tbsp | extra virgin olive oil |
| 4 | boneless/skinless chicken thighs |
| 1 | Vidalia onion, julienned |
| 1 | red pepper, julienned |
| 6 | domestic mushrooms, quartered |
| 3 cloves | garlic, chopped |
| 1 tbsp | Cajun seasoning |
| 1/2 cup | white wine |
| 1/2 cup | heavy cream |
| 1/2 cup | parmesan cheese, grated |
| To taste | salt and black pepper |

Method
Step 1
Bring a large pot of water to a boil.
Step 2
Meanwhile, in a hot skillet, brown the chicken in olive oil over high heat for approximately 5 minutes.

Add vegetables and Cajun seasoning and sauté for 3 additional minutes.
Step 4
Stir in wine, then season with salt and pepper, then reduce liquid by half.
Step 5
Add cream and bring to simmer.
Step 6
