Barilla Gluten Free Penne Pasta with Puttanesca Sauce

Spaghetti alla Puttanesca is a classic Italian dish from Naples that takes only a couple of pantry staples to make, but packs a punch in flavour! This gluten free version pairs perfectly al dente Barilla Gluten Free Penne pasta with Kalamata olives, capers, anchovies and red pepper flakes in a delicious tomato sauce. Garnish with parsley and Romano cheese, and you're done in 20 minutes!

Ingredients

Serves 6

1 box Barilla Gluten Free Penne pasta
2 garlic cloves, peeled and chopped
1/4 tsp red pepper flakes
2 anchovies, oil packed
4 tbsp extra virgin olive oil, divided
1 20-oz can Italian tomatoes, peeled and crushed
1 cup Kalamata olives, pitted and halved
1 tsp capers, drained
6 leaves Italian parsley, chopped
1/2 cup romano cheese, grated (optional)
To taste salt

Method

Step 1

Bring a large pot of water to a boil.

Step 2

Meanwhile, sauté garlic, chili flakes and anchovies in olive oil for 1-2 minutes or until garlic is slightly yellow in colour.

Step 3

Add the tomatoes, olives, and capers; bring to a simmer. Season the sauce with salt.

Step 4

Cook Barilla Gluten Free Penne pasta according to package directions. Drain and toss with the sauce in a large mixing bowl.

Step 5

Stir in parsley and Romano cheese (optional) before serving.
