Barilla Orzo Pasta Salad with Shrimp, Avocado and Goat Cheese

Delicate shrimp, creamy avocado and sweet goat cheese? These are a few of our favourite things, and they go perfectly with al dente Barilla Orzo pasta in this delicious pasta salad recipe. Add in some grape tomatoes and marinated artichokes, and you’ve got your new favourite spring or summer dish. Prep in under 20 minutes for a quick and easy family meal!

Ingredients

Serves 8

1 box Barilla Orzo pasta
2 cups grape tomatoes, halved
1 lb small cooked shrimp, peeled
2 6-oz jars marinated quartered artichokes
2 avocados, diced
To taste sea salt and black pepper
6-oz fresh goat cheese, crumbled
1 tbsp parsley, chopped
1 tsp extra virgin olive oil

Method

Step 1

Cook Barilla Orzo pasta according to package directions. Drain, place on a sheet tray and toss with olive oil to cool.

Step 2

In large mixing bowl, combine pasta, shrimp, tomatoes, artichokes and their juice; toss well to combine.

Step 3

Fold in avocados, season with salt and pepper to taste.

Step 4

Top with cheese and parsley to serve.
