1 box | Barilla Rotini pasta |
2 tbsp | extra virgin olive oil |
1 | garlic clove, chopped |
12 oz | baby bella mushrooms |
3/4 cup | dry Marsala wine |
1 cup | veggie broth |
2/3 cup | pecorino romano cheese |
2 tbsp | parsley, chopped |
To taste | salt and black pepper |
2 tbsp | butter |

Method
Step 1
Place a pot of water to boil; cook Barilla Rotini pasta according to package directions.
Step 2
In a skillet, gently fry garlic with olive oil for 2 minutes or until light yellow. Add mushrooms, increase heat and brown for about 5 minutes.
Step 3
Stir in Marsala wine, reduce to half. Add broth, bring to boil and reduce to half again. Season with salt and pepper.
Step 4
Drain Barilla Rotini pasta, then toss over high heat with mushrooms until liquid is reduced.
Step 5
Turn heat off; stir in butter, parsley and cheese before serving.
