Ingredients

Serves 8

1 box Barilla Spaghetti pasta
4 tbsp extra virgin olive oil
3/4 lb Italian sausage, crumbled
1 pt yellow cherry tomatoes
3 zucchini, sliced into ribbons
1 tbsp parsley, chopped
1 tbsp oregano, chopped
3/4 cup Parmigiano Reggiano cheese, shredded
To taste salt and pepper

Method

Step 1

Bring a large pot of water to a boil.

Step 2

Meanwhile, in a large skillet, sauté sausage for 4-5 minutes or until golden.

Step 3

Add zucchini and sauté for 3-4 minutes.

Step 4

Add tomatoes and cook for an additional 2 minutes, then season with salt and pepper to taste.

Step 5

Cook Barilla Spaghetti pasta according to package directions.

Step 6

Drain and toss with the sauce and 1/2 cup of the cooking water.

Step 7

Remove the skillet from the heat, and fold in the herbs and cheese.
