Ingredients
Serves 5
| 1 box | Barilla Snowfall Pasta |
| 2 tbsp | olive oil |
| 3 | cubed chicken breasts |
| 1 | white onion, thinly sliced |
| 3 | garlic cloves, chopped |
| 2 tsp | fresh thyme leaves |
| 1 tsp | crushed fennel seeds |
| 4 cups | sliced mushrooms of your choice |
| 3/4 tsp | salt |
| 1/3 cup | white wine |
| 8 cups | reduced-salt chicken broth |
| 3 | bay leaves |
| To taste | Pepper |
| 1/2 cup | vegan or regular cream |

Method
Step 1
Heat oil in a large Dutch oven over a medium-high heat and brown the chicken cubes for 5 minutes, stirring only a few times. Set aside on a plate.
Step 2
In the same pan, cook the onion over a medium heat for 5 minutes, stirring frequently. Add oil if necessary.
Step 3
Add the garlic, thyme and fennel seeds, then cook for a further two minutes.
Step 4
Add the mushrooms and cook for a further two minutes.
Step 5
Deglaze with white wine and continue cooking for a further two minutes.
Step 6
Then add the stock, bay leaves and pepper, and bring to the boil.
Step 7
Add the Barilla Snowfall pasta, reduce the heat slightly and cook for 6 minutes.
Step 8
Add the chicken and cook for a further three minutes.
Step 9
Add the cream and stir gently.
Step 10
Serve with a drizzle of olive oil and parsley, if desired.
