Ingredients

Serves 4

1 1/2 cups Barilla Orzo pasta
1 1/2 cups spinach, divided
10 asparagus stalks (approximately 1 cup chopped), quartered
1 cup snap peas, sliced in half lengthwise
1/3 cup crumbled Macedonian feta

For salad dressing

1/3 cup olive oil
1/2 cup Greek yogurt
1 cup spinach
1 lemon, juiced
1 cup fresh spinach
2 tbsp fresh basil
1 tbsp fresh dill
1 tbsp fresh chives
1/2 tsp sugar
To taste salt and pepper

Method

Step 1

Cook Barilla Orzo pasta according to package directions.

Step 2

Add all dressing ingredients to a high-speed blender and blend until smooth.

Step 3

Add cooked Barilla Orzo pasta to a large serving bowl along with asparagus, spinach, snap peas and salad dressing. Toss to combine.

Step 4

Season with salt and freshly ground black pepper. Top with Macedonian feta to serve.
