Lasagne and Oven-Baked Recipes
Ingredients
Serves 12
Lasagna:
| 1 | Box Barilla Oven-Ready Lasagna Pasta |
| 1 2/3 cups | Light ricotta cheese |
| ½ cup | Parmigiano Reggiano, finely grated |
| 3 tbsp | Milk |
| 1 tbsp | Fresh thyme leaves |
| ½ tsp | Garlic powder |
Creamy Lemon Sauce:
| 2 tsp | Butter |
| 2 tbsp | Flour |
| 3 cups | 2% Milk |
| 2 | Lemons, zested |
| ½ | Lemon, juiced |
| ¼ tsp | Nutmeg, grated |
| 350 g | Baby scallops |
| 400 g | Northern shrimp |
| To taste | Salt |
| To taste | Pepper |
Topping
| 1 ½ cup | Breadcrumbs |
| ¼ cup | Parmigiano Reggiano, grated |
| 2 tbsp | olive oil |
| 1 tsp | Fresh thyme, chopped |

Method
Step 1
Combine ricotta, Parmigiano Reggiano, milk, thyme and garlic powder. Set aside in the fridge.
Step 2
In a saucepan, melt the butter over medium heat. Add flour and whisk for 2 mins, until lightly golden.
Step 3
Warm the milk in the microwave, then slowly whisk into the butter-flour mixture. Let the sauce thicken over low heat for a few minutes. Add lemon zest, lemon juice, nutmeg, salt, and pepper. Remove from heat, then stir in the scallops and shrimp. Set aside.
Step 4
Preheat oven to 350°F. In a baking dish, spread a thin layer of lemon sauce on the bottom. Add a layer of seafood sauce.
Step 5
Repeat the layering until all ingredients are used, finishing with a layer of sauce. You should have 5 layers total.
Step 6
In a bowl, combine breadcrumbs, Parmigiano Reggiano, olive oil, and thyme. Sprinkle over the top of the lasagna.
Step 7
Bake for 30 to 35 minutes, until golden and crispy on top. Let rest for 5 minutes before serving. Garnish with a drizzle of olive oil and lemon zest.
