Ingredients

Serves 2

1/3 box Barilla Spaghettini pasta
2 egg yolks
To taste black pepper
3/4 cup grated pecorino romano cheese
1/2 cup guanciale, or your choice of cured meat

Method

Chef's tip

This recipe can also be made using Barilla Spaghetti or Spaghettoni Pasta.

Step 1

Cook Barilla Spaghetti pasta in a large amount of salted boiling water.

Step 2

In the meantime, separate egg whites from the yolks.

Step 3

In a mixing bowl, add egg yolks and 1/2 cup of the grated pecorino romano cheese and a handful of black pepper. Add some of the pasta water to the mix and whisk until smooth.

Step 4

In a non-stick pan, cook the guanciale cubes until they develop colour without adding any oil.

Step 5

Drain the Barilla Spaghetti pasta when at al dente. Set some of the pasta water aside to add flavour to the guanciale.

Step 6

Toss the guanciale in the egg and cheese mixture. Mix well, and add some of the pasta water if mixture needs to be thickened.

Step 7

Add Barilla Spaghetti pasta to mixture, coat well and serve immediately.
