A beautiful medley of fresh Italian parsley, mint, basil, sage are blended with garlic and Parmigiano Reggiano cheese for a savoury pesto mix. Ingredients

Serves 6

1 box Barilla Gluten Free Spaghetti pasta
1 small Idaho potato, diced
2 cloves garlic, peeled
2 tbsp Parmigiano Reggiano cheese
10 leaves fresh Italian parsley, washed
10 leaves fresh basil, washed
5 leaves fresh mint, washed
2 leaves fresh sage, washed
6 tbsp extra virgin olive oil
1 red bell pepper, jarred and diced
To taste salt and black pepper

Method

Step 1

Bring a large pot of water to a boil, season with salt.

Step 2

Combine Barilla Gluten Free Spaghetti pasta and potatoes. Cook according to package directions, along with added potatoes.

Step 3

Combine garlic, cheese (optional), herbs and olive oil in a blender, pulse until smooth.

Step 4

Season with salt and pepper.

Step 5

Drain Barilla Gluten Free Spaghetti pasta and potatoes, combine with pesto and diced peppers in a large mixing bowl before serving.
